This week supper club was at our house, the first one we have hosted since we got married earlier this month! I decided I was up for a challenge. We received Julie Child's cookbook Mastering the Art of French Cooking, and I was determined to learn to cook Coq a Vin. But that was not all, I made Coq a Vin, homemade bread, and two tasty desserts. After chasing all of the ingredients down at three different grocery stores, I was ready to start. Have you ever clean, cut and browned a chicken? Well, it's not the most pleasant thing to do, but it's definitely the best for the taste buds. You just can't get the same effect with pre-cut chicken. But I am getting ahead of myself, this posting isn't about the bread or the chicken or even supper club, but about a delicious recipe I found online that is sure to send your taste buds out of this world. Blueberry Goat Cheese & Basil Pie. Seriously.
Sounds like an odd combo, I know. And who puts goat cheese in a dessert? Well I did, and you should too! For the first time in a while, I actually followed the recipe for this pie down to the tsp. I usually play around, mixing flavors and ratios, but I decided to leave this one to the pros. And I'm glad I did, so when I go back and try it again I can say, "hey, I know better than those guys!". The pie was BEAUTIFUL and had a fantastic flavor, but definitely could use some altering. I think it needs more thickener and even perhaps for to mash some of the blueberries to make for a more solid consistency. But you try and let me know what you think.
The recipe is from the Food Network, and while it sounds like it may be hard to make such a tasty pie, it isn't! If you have a few hours and are looking for something fun to try, bake up something yummy for some loved ones or throw an impromptu Supper Club!

Blueberry Goat Cheese Pie
Ingredients
Crust:
2 cups all-purpose flour
1/2 to 3/4 cups cold margarine
1 tablespoon sugar
Pinch salt
Cold water
Filling:
1/2 cup soft goat cheese
1/2 cup heavy cream
1 large egg
1/2 cup brown sugar
1/4 cup all-purpose flour
Pinch salt
1 tablespoon finely chopped fresh basil
5 cups fresh blueberries
Topping:
1 cup sliced almonds
1/2 cup sugar
1/3 cup melted margarine
For the crust:
Combine the flour, margarine, sugar, and salt in a large bowl. Work with your fingers
gathering and crumbling until you have a crumbly mixture, about the size of peas.
In small amounts, slowly add cold water, gently incorporating by hand. As soon as the dough comes together in a ball, wrap in plastic wrap and chill for 30 minutes.
For the filling: Mix the goat cheese, heavy cream, egg, sugar, flour, salt and basil together in a bowl. Add the blueberries and mix to desired texture.
For the topping: Mix the almonds, sugar and margarine in bowl, set aside.
Preheat the oven to 350 degrees F. Roll out the dough and place in a 10-inch pie pan. Pour the filling into the crust and sprinkle the topping over the top. Bake 25 minutes, rotating at the pie halfway through.
